Aubergine Caviar

I've recently tried making Aubergine Caviar ( aubergines being what Americans call eggplants). Pardon, I didn't mean recently because I made this last year , but it's been forever that I've been trying to share this recipe with all my darling readers. In the video for this recipe he (Mr.Ramsay)  makes them as an accompaniment to toasted slices of bread. In my case I used mixed greens and delicious organic tomatoes from my garden (tomatoes cultivated by my father owner of a useful green thumb).

  1. omg organic tomatoes! seriously tomatoes HAVE to be organic theres nothing worse than eating those tomatoes from supermarkets that have no taste what so ever
